NMCG is excited to collaborate with Trevor Warmedahl to bring Sour Milk School to New Mexico!

The curriculum is designed to cover a wide range of topics including the basics of cheese science and milk microbes, using natural starters, and making fresh and ripened cheeses. In addition to theoretical instruction, the workshop prioritizes sensory engagement, allowing students to fully immerse themselves in the cheese-making process. By seeing, smelling, touching, and tasting their creations, participants develop a nuanced understanding of microbial interactions and fermentation dynamics. Throughout the workshop, emphasis will be placed on resourcefulness, with discussions on common tools, DIY equipment, and natural materials for cheese shaping and storage. Whether you're a novice enthusiast or an experienced cheese aficionado, this workshop offers an enriching educational experience that will inspire creativity in cheese making.

This workshop will be held at Polk’s Folly Farm in San Antonito, NM. Your registration includes delicious locally-sourced lunches for all days of the workshop and everyone is invited to potluck-style dinners on the farm. Participants are also welcome to hangout out during morning milking and even give milking a try if they’d like!

If you need lodging, some on-site options (both camping & private rooms) are available and breakfast will be included. If you are interested in either of these lodging options, reach out and we will provide more information and connect you with our hosts at Polk's Folly Farm.

IMPORTANT INFO:

  • Your registration fee must be fully paid at least two weeks prior to the start of the workshop.

  • If you are an NMCG member, you may be asked to provide proof of your membership (photo of membership card or email receipt of membership purchase)

CANCELLATION & REFUND POLICY

  • All paid registrants will receive a full refund if we do not have 7 registrants by August 5th, 2024. 

  • You are eligible for a full refund if you need to cancel your registration and notify us before August 5th, 2024. 

  • Refunds will NOT be issued for cancellations made after August 5th, 2024, though we may consider requests for extenuating circumstances. However, a refund is not guaranteed.
